Chicken
Brown Rice Primavera
1 tbsp.
Oil
½ cup each sliced carrots and yellow pepper
¾ lb. Skinless chicken breasts
Squash
2 Cloves
garlic, minced
¼ tsp. ground pepper
1 ½ cups chicken broth
1 ½ cups whole grain brown rice
1 cup broccoli flowerets, uncooked
½ red pepper, cut into strips
¼ cup parmesan cheese
- Heat
oil in large skillet on medium heat. Add chicken and garlic;
cook and stir until chicken is browned.
- Stir
in broth, vegetables, and ground pepper. Bring to boil.
- Stir
in rice. Return to boil
- Reduce
to low heat, cover and simmer 5 minutes.
- Remove
from heat and stir. Cover. Let stand 5 minutes.
- Stir
in cheese.
