Chicken Brown Rice Primavera

1 tbsp. Oil
½ cup each sliced carrots and yellow pepper
¾ lb. Skinless chicken breasts
Squash
2 Cloves garlic, minced
¼ tsp. ground pepper
1 ½ cups chicken broth
1 ½ cups whole grain brown rice
1 cup broccoli flowerets, uncooked
½ red pepper, cut into strips
¼ cup parmesan cheese

  1. Heat oil in large skillet on medium heat. Add chicken and garlic; cook and stir until chicken is browned.
  2. Stir in broth, vegetables, and ground pepper. Bring to boil.
  3. Stir in rice. Return to boil
  4. Reduce to low heat, cover and simmer 5 minutes.
  5. Remove from heat and stir. Cover. Let stand 5 minutes.
  6. Stir in cheese.
